Sausage, Rich Gravy, and Biscuit Pie


Ingredients

For the Sausage Filling:

  • 1 tablespoon olive oil or butter
  • 1 lb ground sausage (breakfast sausage, Italian sausage, or your favorite variety)
  • 1 medium onion , chopped
  • 2 cloves garlic , minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth (or beef broth for a richer flavor)
  • 1/2 cup heavy cream or whole milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper , to taste

For the Biscuit Topping:

  • 1 can (16.3 oz) refrigerated biscuit dough (or homemade biscuit dough)
  • Optional: 1 tablespoon melted butter for brushing

Instructions

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C) .

Step 2: Cook the Sausage Filling

  1. In a large skillet or Dutch oven, heat the olive oil or butter over medium heat.
  2. Add the sausage and cook until browned and crumbled, about 5–7 minutes. Drain excess grease if needed.
  3. Stir in the onion and cook for 3–4 minutes, or until softened. Add the garlic and cook for 1 minute more.
  4. Sprinkle the flour over the sausage mixture and stir to coat. Cook for 1–2 minutes to remove the raw flour taste.
  5. Gradually whisk in the chicken broth , stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 3–5 minutes, or until the sauce thickens slightly.
  6. Stir in the heavy cream , thyme , rosemary , salt , and pepper . Simmer for 2–3 minutes, then remove from heat.

Step 3: Assemble the Pie

  1. Transfer the sausage filling to a greased 9x13-inch baking dish, spreading it evenly.
  2. Separate the biscuit dough into individual biscuits. Flatten each biscuit slightly with your hands or a rolling pin.
  3. Arrange the biscuits on top of the sausage filling, overlapping slightly to cover the surface.
  4. Optional: Brush the tops of the biscuits with melted butter for extra flavor and browning.
