I prepared this dish for a get together, and guests couldn’t stop gushing about it

 


Ingredients:

1 onion, finely diced

1/2 cup granulated white sugar

2 eggs, well-beaten

1 cup self-rising cornmeal

1 cup self-rising flour

Vegetable oil, for frying

Instructions:

1. Heat the frying oil in a deep pot to around 365°F.

2. In a mixing bowl, combine the finely diced onion and granulated white sugar.

3. Stir in the well-beaten eggs until the mixture is well incorporated.

4. Gradually add the self-rising flour and self-rising cornmeal to the mixture, stirring until a consistent batter forms.

5. Using a spoon or a small scoop, carefully drop spoonfuls of the batter into the hot oil. Avoid overcrowding the pot.

6. Fry the hushpuppies for about 1-2 minutes per side or until they turn golden brown, flipping occasionally for even cooking.

7. Remove the hushpuppies from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.


8. Serve the hushpuppies warm as a delightful side dish or snack.
