WALKING TACO CASSEROLE

 


Layers of Frito chips, ground beef, and shredded cheese are topped with lettuce, tomatoes, and olives in this walking taco dish. It's a taco salad in casserole style! Provides plenty of leftovers for the whole family. 
What I love about taco casserole is that it can be prepared up to two days in advance. That is, you may prepare a large amount, freeze it, and then reheat it for dinner. 

Brown, drain, and season your meat in advance to make taco casserole, then let the ground beef to cool in a greased baking tray. Refrigerate covered with foil or plastic wrap. 
When ready to serve, remove the casserole from the refrigerator, sprinkle with chips and cheese, and bake for 25 minutes at 350 degrees Fahrenheit. 
Bake for a further 5 minutes, or until the cheese melts. Add the tomatoes and lettuce, and you're done! 

I like to use 90% lean ground beef. It retains a lot of taste yet is not too oily. You may also substitute ground turkey for a healthier choice. 

This dish yields eight servings, which is ideal for a small gathering of family and friends, and to serve a larger group, you can easily double the recipe. 

  – INGREDIENTS NEEDED FOR THIS CASSEROLE:

• 1.5 Kg.Of grounded beef. 

• A medium chopped white onion. 

• Canned green chilies, I used a small can. 

• Canned Enchilada Sauce, only one can is enough. 

• 2-oz.Of cream cheese. 

• Fritos corn chips, one bag.  

• One pkg.Of shredded cheese.  

  – TOPPING INGREDIENTS: 

• 1 medium fresh diced tomato. 

• ¾ Cup.Of shredded lettuce.

• A can.Of 16-oz of salsa. 

• A 8-oz container.Of sour cream. 

PREPARATION METHOD:

• Step 1 – First, you need to brown the ground beef in a medium skillet with chopped white onion. 

• Step 2 – Once browned, add in the canned green chilies with enchilada sauce and the cream cheese that you need to keep at room temp. Before using. 

• Step 3 – When everything is well cooked, and all combined together, choose a medium pan of 9.13-inches, and repeat thin layers as directed: start with the Fritos chips, then the cooked mixture, and over the top spread the shredded cheese evenly. 

• Step 4 – And following that, you need to bake the casserole at 350 degrees for just 15 to 20 minutes, and removed it from the oven once the cheese is bubbly.

• Step 5 – And finally to serve, you need to top individual servings with shredded lettuce, tomato slices, salsa, and sour cream.

NOTE: 

• This dish works nicely with corn chips and tortilla chips. However, other taco components such as olives, beans, jalapeño, and guacamole may be added.
