This Strawberry Cheesecake

So I talked a little bit about the IVF transfer yesterday in the lifestyle department. That was officially a week ago today and we have until Monday before we know if it worked or not. Uh! Thank goodness it's Friday and we have plans every day for this weekend. ๐Ÿ™‚


We meet with our church group tonight, do nails with friends tomorrow and hang out with some other friends on Sunday. Busy! Dispersed! This is the way I like it. ๐Ÿ™‚


* Ingredients:

° 1 package (8 ounces) soft cream cheese
° 1 cup (8 ounces) sour cream
° 1/2 cup cold milk
° 1 package (3.4 ounces) instant vanilla pudding mix
° 1 carton (12 ounces) frozen whipped cream, thawed
° 1-1/2 cups butter-flavored crackers (about 38 crackers)
° 1/4 cup melted butter
° 2 packages (21 ounces each) strawberry pie filling

* Directions :

In a large bowl, beat cream cheese until smooth. Beat in sour cream. Mix well.

In a small bowl, whisk the milk and pudding mixture on low speed for 2 minutes. Stir with cream cheese mixture. fold in the skin.
In a small bowl, mix biscuits with butter.

In 2-1/2-qt. Truffle bowl, layer half of the cream cheese mixture, rusk and pie filling. Repeat the layers. Refrigerate until serving. Yield: 12-16 servings.
