This Strawberry Cheesecake

So I talked a little bit about the IVF transfer yesterday in the lifestyle department. That was officially a week ago today and we have until Monday before we know if it worked or not. Uh! Thank goodness it's Friday and we have plans every day for this weekend. 🙂


We meet with our church group tonight, do nails with friends tomorrow and hang out with some other friends on Sunday. Busy! Dispersed! This is the way I like it. 🙂


* Ingredients:

° 1 package (8 ounces) soft cream cheese
° 1 cup (8 ounces) sour cream
° 1/2 cup cold milk
° 1 package (3.4 ounces) instant vanilla pudding mix
° 1 carton (12 ounces) frozen whipped cream, thawed
° 1-1/2 cups butter-flavored crackers (about 38 crackers)
° 1/4 cup melted butter
° 2 packages (21 ounces each) strawberry pie filling

* Directions :

In a large bowl, beat cream cheese until smooth. Beat in sour cream. Mix well.

In a small bowl, whisk the milk and pudding mixture on low speed for 2 minutes. Stir with cream cheese mixture. fold in the skin.
In a small bowl, mix biscuits with butter.

In 2-1/2-qt. Truffle bowl, layer half of the cream cheese mixture, rusk and pie filling. Repeat the layers. Refrigerate until serving. Yield: 12-16 servings.
