+ Beyond the recipe:
Butter is where most cookie recipes start
from. It has several functions, including preserving soft cookies as well as
adding flavor. Since the pecan butter cookies are baked today, the milk
proteins inside the butter begin to turn brown - giving these cookies a nutty
flavor. It is thick with toasted pecans. Win pecan butter.
Not only that, the way the butter is mixed
into the biscuit dough affects the texture of the biscuit. In my favorite
chocolate brownie recipe, I use melted butter. Melted butter provides a
thicker, chewy texture. But with today's dessert, I chose to mix butter and
sugar together. During this spreading process, air is incorporated into the
dough, which in turn helps ferment the biscuits while baking. Cookies rise, the
centers remain soft, and the edges are somewhat brittle and chewy.
Biscuit dough is very soft and slightly
sticky. And do you know what works best for sticky soft biscuit dough? . Cool
this dough for at least 3 hours, up to 3 days. Cooling allows the biscuit dough
to thicken and enhance the brown sugar, butter, and flavor of the toasted
pecans.
