1. Dump & Bake
Preheat oven to 375°F (190°C).
In a 9x13-inch baking dish, combine:
Chicken, rice, broth, lemon juice/zest, garlic, oregano, salt & pepper.
Cover tightly with foil and bake 45 minutes.
Uncover, fluff rice, and bake 5–10 more minutes until liquid is absorbed.
2. Make Tzatziki
While baking, mix:
Yogurt, cucumber, dill, garlic, and salt. Chill until serving.
3. Assemble Bowls
Divide casserole into bowls.
Top with tzatziki, fresh veggies, and feta.
Drizzle with olive oil and extra lemon wedges.
