Ingredients You’ll Need:

For the Noodles:

  • 8 oz spaghetti, fettuccine, or linguine (or your favorite pasta)
  • 2 tablespoons olive oil
  • 4 cloves garlic , minced
  • 1/2 teaspoon red pepper flakes (optional, for a spicy kick)
  • 1 can (14 oz) diced tomatoes (or fresh tomatoes, chopped)
  • 1/2 cup tomato sauce (or passata for a smoother texture)
  • 1/4 cup grated Parmesan cheese , plus more for serving
  • 1/4 cup fresh basil leaves , torn or chopped
  • Salt and black pepper , to taste

Optional Add-Ins:

  • 1/2 cup heavy cream (for a creamy Alfredo-inspired twist)
  • 1/2 lb cooked chicken, shrimp, or Italian sausage (for added protein)
  • 1/2 cup sliced mushrooms, olives, or sun-dried tomatoes (for extra flavor)

Step-by-Step Instructions:

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water , then drain the noodles and set aside.

Step 2: Sauté the Aromatics

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using), sautéing for 1–2 minutes , until fragrant but not browned.

Step 3: Build the Sauce

  1. Add the diced tomatoes and tomato sauce to the skillet. Stir well and season with salt, black pepper, and half of the fresh basil. Simmer for 5–7 minutes , allowing the flavors to meld.
  2. If you’d like a creamy sauce, stir in the heavy cream during the last 2 minutes of cooking.

Step 4: Combine the Pasta and Sauce

  1. Add the cooked pasta to the skillet, tossing gently to coat it evenly in the sauce. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it.
  2. Stir in the grated Parmesan cheese and remaining fresh basil. Taste and adjust seasoning as needed.

Step 5: Serve and Enjoy

  1. Divide the noodles among plates or bowls. Top with additional Parmesan cheese, a drizzle of olive oil, and a sprinkle of red pepper flakes or fresh basil for garnish.
  2. Serve with crusty bread or a side salad for a complete Italian-inspired meal.
