Ingredients
For the Mashed Potatoes:
- 4 cups mashed potatoes (homemade or store-bought)
- 1/2 cup grated cheddar cheese (or your favorite melting cheese)
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions (optional, for added flavor)
- Salt and freshly ground black pepper , to taste
For Assembly:
- 12 slices of bacon , halved crosswise
- 1 cup shredded cheese (cheddar, mozzarella, or pepper jack work great)
- Optional: 1/2 teaspoon garlic powder or paprika for extra seasoning
For Serving:
- Sour cream, ranch dressing, or marinara sauce for dipping
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C) . Line a baking sheet with parchment paper or a wire rack for crispier results.
Step 2: Prepare the Mashed Potato Mixture
- In a large mixing bowl, combine the mashed potatoes , cheddar cheese , Parmesan cheese , and green onions (if using). Season with salt , pepper , and optional garlic powder or paprika .
- Mix until the ingredients are evenly distributed and the mixture holds together when shaped.
Step 3: Shape the Potato Balls
- Scoop about 2 tablespoons of the mashed potato mixture into your hands and flatten it into a disc.
- Place a small cube of shredded cheese in the center of the disc and wrap the mashed potato around it, shaping it into a ball. Repeat with the remaining mixture.
