  • 1 lb ground breakfast sausage
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper , to taste
  • 2 cups shredded cheddar cheese , divided
  • 1 can refrigerated biscuit dough (about 8 biscuits), quartered

Optional Toppings:

  • Chopped green onions
  • Crumbled cooked bacon
  • Hot sauce

Step-by-Step Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 375°F (190°C) . Lightly grease a 9x13-inch baking dish.

Step 2: Cook the Sausage

  1. In a large skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain excess grease and set aside.

Step 3: Make the Gravy

  1. In the same skillet, melt the butter over medium heat. Stir in the flour to create a roux, cooking for 1–2 minutes until golden.
  2. Gradually whisk in the milk, stirring constantly to avoid lumps. Add the garlic powder, onion powder, salt, and pepper. Cook until the mixture thickens (about 5–7 minutes).
  3. Stir in 1 1/2 cups of shredded cheese and the cooked sausage until melted and combined. Remove from heat.

Step 4: Assemble the Casserole

  1. Spread the thawed hash browns evenly across the bottom of the prepared baking dish.
  2. Pour the sausage gravy mixture over the hash browns, spreading it out evenly.
  3. Sprinkle the remaining 1/2 cup of shredded cheese on top.
  4. Arrange the quartered biscuit pieces evenly over the casserole.
