Ingredients

  • 6 medium-sized potatoes (Russet or Yukon Gold work well)
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it.

Step 2: Prepare the Potatoes

  1. Wash and dry the potatoes. Cut them in half lengthwise.
  2. Using a knife, score the cut side of each potato in a crisscross pattern, being careful not to cut all the way through.

Step 3: Season the Potatoes
