1. Get everything ready:
Heat your oven to 175°C (350°F) before using it. Lightly oil an 8-inch square baking pan and cover it with parchment paper.
Mix the gluten-free flour, ground almonds, vegan butter, maple syrup, and sea salt in a food processor. Keep working on the mixture until it becomes a dough.
Press the dough evenly at the bottom of the pan. Use a spatula or a flat-bottomed glass to make it smooth. Poke the dough with a fork to avoid it puffing up.
Bake for 15-18 minutes, or until lightly brown. Let it cool down until it reaches the same temperature as the room.
2. Prepare the Raspberry Jelly: In a pot, warm the raspberries on medium heat for around 10 minutes until they turn into jam-like consistency. Put in a blender and mix until it's smooth.
Filter the mixture with a strainer to get rid of the seeds, and then put it back in the pan.
Put the maple syrup, lemon juice, and agar-agar. Heat until boiling, then lower the heat and let it cook for 3 minutes while stirring constantly.
Take off the heat and allow it to cool for approximately 10 minutes.
Spread the jelly evenly on top of the cooled shortbread crust. Put in the freezer for 30 minutes to harden.
3. Make the Salted Caramel: Put all the ingredients for the caramel in a food processor and blend until smooth.
Put the caramel on top of the raspberry jelly that has already set. Use a spatula to spread it evenly.
Put in the freezer for at least 4 hours, or overnight if you can.
4. Put the Chocolate Topping: Melt most of the vegan chocolate in a double boiler. After the chocolate has melted, take it off the heat and mix in the last portion of chocolate until it is well blended.
Put the melted chocolate on top of the hardened caramel layer.
Add freeze-dried raspberries on top, if desired. Put in the refrigerator for 15 minutes to firm up.
5. Cut and Serve: To get neat slices, put a sharp knife in hot water, dry it, and carefully cut the shortbread. The warmth of the knife will make it easier to cut.
Keep the slices in a sealed container in the refrigerator for 3-5 days. You can also freeze any extra food and thaw it when you need it.
