Recipe for a Fancy Vanilla Dessert


 

2/3 cup of thick cream


1 cup whole milk


1/2 cup of white sugar


4 big egg yolks


2 tablespoons of vanilla extract or 1 vanilla bean pod, split open and seeds removed

Guidelines:


In a pot, mix together milk, cream, and half of the sugar. Warm the mixture on medium heat, stirring occasionally, until it starts to simmer. Take off the heat when bubbles start to appear on the edges.

In another bowl, mix egg yolks and the rest of the sugar until they become light and a bit thick.


Gently pour the warm cream mix into the bowl with the egg yolks while stirring constantly to avoid lumps.


Put the mix back in the pot and heat it on medium heat. Add vanilla bean seeds or extract and stir until the mixture thickens enough to cover the back of a spoon, for about 5-7 minutes.


After the custard thickens, take it off the heat and pour it through a fine strainer into a clean bowl to get rid of any bits of vanilla bean.

Let the custard cool down, then cover it with plastic wrap touching the top to avoid a skin from forming. Put in the refrigerator for at least four hours, or better yet, overnight, to mix flavors and cool down completely.


After cooling down, stir the custard in an ice cream maker following the instructions provided by the manufacturer until it becomes smooth and creamy.


Serve right away for a softer feel or put in a container that can go in the freezer and freeze for a harder texture.
