Preheat the oven to 375°F (190°C).
In a pan on medium heat, put the chopped garlic and onion in the olive oil. After about 5 minutes of cooking, they should be soft and see-through.
Next, use a spoon to separate the pork sausage before putting it in the pan. Cook until it turns golden brown. After mixing, add the sage, salt, pepper, thyme, and salt. Remove the pan from the stove and let it cool down for a bit.
Next, sprinkle a surface with some flour and flatten the puff pastry with a rolling pin. Create rectangles that are approximately 5 inches long and 3 inches wide.
Divide the sausage mixture into two parts and place a small amount at each end of the pastry rectangles.
Put a small amount of whisked egg on the dough to close it, then wrap it around the sausage, making sure to fold in the edges.

Make the rolls golden by brushing them with the remaining beaten egg.
Make them bigger and put them in the oven that you have already heated. Bake for 25-30 minutes until they turn golden brown.
