Hands down, this is the best meatloaf recipe we've ever had in our house

 



Ingredients:


2 lbs ground beef

1 finely chopped yellow onion (reserve some for glaze)

12 oz dried stuffing mix

1.5 cups milk

2 eggs

Season with salt & pepper

Glaze Ingredients:


1.5 cups ketchup

1/4 cup packed light brown sugar

2 tablespoons reserved minced onion

2 teaspoons white vinegar

1 tablespoon classic yellow mustard

1/2 teaspoon pepper

Directions:


Prep your slow cooker by lining with aluminum foil, leaving enough to aid in removing the meatloaf later.

Stir glaze components in a bowl and set aside.

In a separate large bowl, amalgamate ground beef, remaining onion, stuffing mix, milk, eggs, and seasoning. Mold into a loaf and position in the slow cooker. Drizzle with half a cup of the crafted glaze.

Seal the slow cooker and simmer on low for 6-8 hours or high for 3-4 hours, ensuring the meatloaf's core reaches 160°F (71°C).

Post-cooking, use the foil to gently extract the meatloaf. Garnish with another 2/3 cup of glaze and broil till it turns tacky.



Plate with preferred accompaniments and serve with residual glaze.
