New York cheesecake


Cheesecake is my husband favorite the way to her son's heart was through his stomach — and whenever she wanted something to do when he was a kid, she bribed him with a slice of New York cheesecake.  She may be a traditional lady, but I got the message loud and clear: Learn how to make a good cheesecake!

Although the ingredients are simple, this cheesecake can be a little tricky to make. Since the cheesecake is a custard, it needs to be cooked gently in a double boiler, and you have to worry about cracking the surface of the cake, as well as overcooking or undercooking.  However, with the right recipe and a few tips, this New York-style crack-free cream cheesecake is totally doable, even for beginners.

This recipe makes a classic New York-style cheesecake with a buttery graham cracker crust and a rich, dense filling made with cream cheese, eggs, sugar, sour cream, vanilla, a squeeze of lemon, and a few tablespoons of flour.
