*Cheese Cream Pound Cake*


°6 Mozzarella stick
°1/2 c grated dry Parmesan cheese
°1 1/2 c fried pork rinds
°1 tsp Italian seasoning mix
°1 egg
°2 tsp of water

Cut the Mozzarella sticks in half widthwise and set aside
Place the egg and water in a small, shallow dish or saucepan. Whisk to mix.
Crush the pork rinds with a rolling pin or crush them in a blender. Should make about 1/2 cup pork rind crumbs.
Place the Parmesan cheese, ground pork rinds and Italian seasoning in a shallow baking dish
Dip mozzarella sticks, one at a time, first in egg wash, then in breadcrumbs, then repeat both egg wash and breadcrumbs for second layer.
Place the mozzarella on a dish or pan that will go in the freezer.
Freeze for two hours
After two hours: heat the oven to 500 degrees.
Working quickly, line a baking dish with parchment paper or grease it.
Place the frozen mozzarella sticks straight from the freezer into the pan.
Spray with a light coating of olive oil. (optional)
Bake for 6 to 8 minutes, until the coating is brown and the cheese is warm and soft.
Serve immediately with hot marinara sauce, if desired.
