Old fashioned salmon patties


°6 oz. can skinless/boneless pink salmon
°2 T. diced onion
°a good pinch of salt and pepper
°1 large egg
°1 tablespoon buttermilk
°2 tablespoons cornmeal
°4 T. all-purpose flour
°Veg. frying oil

* How to do it :

In a bowl, combine salmon, onion, salt and pepper. Stirring in egg, buttermilk, cornmeal also flour. Blend well. Heat for 1/3″ of oil in bottom  med. size iron pan on med.. Drop spoonfuls of the salmon mixture into the hot oil and flatten slightly. Frying, in batches, for a min on every side or to golden brown. Drain on paper bag .
