This simple recipe proves that you don’t need fancy ingredients or complicated techniques to make delicious, rustic bread at home. Perfect for sandwiches, toast, or as a side dish, this no-fuss loaf will have you wondering why you ever bought bread in the first place!
Ingredients
- 3 cups all-purpose flour (or bread flour for extra chewiness)
- 1 tablespoon sugar (optional, but helps with browning and flavor)
- 1 tablespoon active dry yeast
- 1½ teaspoons salt
- 1 cup warm water (about 110°F/45°C)
- 2 tablespoons olive oil (plus extra for greasing)
Instructions
Step 1: Activate the Yeast
- In a small bowl, dissolve the sugar (if using) and yeast in the warm water. Stir gently and let it sit for 5–10 minutes, or until the mixture becomes frothy. This step ensures the yeast is alive and ready to work its magic.
Step 2: Mix the Dough
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.
- Stir everything together with a wooden spoon or spatula until a rough dough forms. If the dough feels too sticky, add a little more flour; if it’s too dry, add a splash of water.
Step 3: Knead the Dough
- Turn the dough out onto a lightly floured surface and knead for 5–7 minutes, or until smooth and elastic. The dough should be slightly tacky but not overly sticky.
- Shape the dough into a ball and place it in a clean, lightly oiled bowl. Cover the bowl with a damp towel or plastic wrap and let it rise in a warm, draft-free spot for 1–2 hours, or until doubled in size.
Step 4: Shape and Rise Again
- Once risen, punch down the dough to release any air bubbles. Transfer it to a parchment-lined or greased loaf pan (8x4 inches) or shape it into a round boule and place it on a baking sheet.
- Cover the shaped dough again and let it rise for another 30–45 minutes, or until puffy.
Step 5: Bake
- Preheat your oven to 375°F (190°C). Slash the top of the loaf with a sharp knife or razor blade to allow for even expansion during baking.
- Bake for 30–35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. For extra crustiness, brush the top with water halfway through baking.
