  • 2 cups fresh spinach , roughly chopped

For Serving:

  • 12 oz fettuccine (or zucchini noodles for low-carb)
  • Fresh parsley , chopped
  • Extra Parmesan , grated

Step-by-Step Instructions

  1. Roast the Tomatoes:
    Preheat oven to 400°F (200°C). Toss tomatoes with olive oil, garlic, salt, pepper, and thyme. Spread on a parchment-lined baking sheet. Roast 15-20 minutes until blistered and caramelized.

  2. Cook the Pasta:
    Boil pasta in salted water until al dente. Reserve ½ cup pasta water before draining.

  3. Sear the Chicken:
    Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken 4-5 minutes per side until golden and cooked through. Remove and set aside.
