Ingredients You’ll Need

Serves 4–6

For the Quesadillas:

  • 8 medium flour tortillas (8–10 inches in diameter)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a Mexican blend work well)
  • 1 cup sliced mushrooms (cremini, button, or shiitake)
  • 1 cup fresh spinach , chopped
  • 1/2 cup diced onions (optional, for extra flavor)
  • 1 tbsp olive oil
  • Salt and pepper , to taste

Optional Toppings:

  • Sour cream or Greek yogurt
  • Guacamole or avocado slices
  • Salsa or pico de gallo
  • Fresh cilantro , chopped

Step-by-Step Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 400°F (200°C) . Lightly grease a large baking sheet or line it with parchment paper.

Step 2: Sauté the Veggies

  1. Heat the olive oil in a skillet over medium heat. Add the sliced mushrooms and diced onions (if using), and sauté for 5–7 minutes until softened and slightly browned.
  2. Stir in the chopped spinach and cook for 1–2 minutes until wilted. Season with salt and pepper to taste. Remove from heat and set aside.

Step 3: Assemble the Quesadillas

  1. Place 4 tortillas on the prepared baking sheet. Sprinkle a generous amount of shredded cheese evenly over each tortilla.
  2. Divide the sautéed mushroom-spinach mixture evenly among the tortillas, spreading it over the cheese.
  3. Top with another layer of shredded cheese, then place a second tortilla on top to form a quesadilla “sandwich.”

Step 4: Bake

  1. Bake the quesadillas for 10–12 minutes , or until the tortillas are golden brown and crispy, and the cheese is melted.
  2. For extra crispiness, carefully flip the quesadillas halfway through baking.

Step 5: Serve

  1. Remove the quesadillas from the oven and let them cool for 2–3 minutes before slicing into wedges.
  2. Serve with your favorite toppings like sour cream, guacamole, salsa, or fresh cilantro.
