Ingredients
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced (button, cremini, or your choice)
- 3 cups fresh spinach, roughly chopped
- 2 cups vegetable or chicken broth
- 1/2 cup heavy cream or half-and-half (optional, for creaminess)
- 1/4 cup Parmesan cheese, grated
- Salt and black pepper, to taste
- 1 teaspoon dried thyme (optional, for added flavor)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Orzo
- Bring a medium pot of salted water to a boil.
