Ingredients
1 lb ground turkey
2 medium sweet potatoes, peeled and diced into small cubes
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon chili powder(optional, for heat)
Salt and black pepper, to taste
2 tablespoons olive oil
1/4 cup water or chicken broth
1/4 cup fresh parsley or cilantro, chopped (for garnish)
1/2 cup shredded cheese(optional, for topping)
Instructions
Step 1: Cook the Sweet Potatoes
Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add the diced sweet potatoes and cook for 6–8 minutes, stirring occasionally, until they begin to soften. Add a splash of water or broth if they start to stick. Remove from the skillet and set aside.
Step 2: Brown the Turkey
In the same skillet, heat the remaining 1 tablespoon olive oil.
Add the ground turkey and cook for 5–7 minutes, breaking it into crumbles with a spatula, until browned and cooked through. Season with a pinch of salt and pepper.
