Here are the steps:

The First Round of Sautéing: In a large saucepan, heat the sunflower oil over medium heat. Cook until transparent, then add one diced onion.

Incorporate the Heartier Vegetables: Toss in the chopped potatoes and carrots with the softened onion in the saucepan. Add salt and enough water to cover the veggies. Simmer, covered, for 15 to 20 minutes, or until veggies are soft, after bringing the mixture to a boil.
