What You Need to Make the Soup Base:
1.5 pounds of Italian sausage, rinds removed (mild or spicy)
1/4 cup of olive oil
1 diced medium onion
three minced garlic cloves
Two peeled and sliced carrots
chopped celery (two stalks)
Quarts of chicken stock
1.5 ounces (1 can) chunked tomatoes, no-seed
half a spoonful of pesto
dried oregano, 1 teaspoon
