No matter the season, this warm and nutritious Easy Vegetable Beef Soup is sure to be a delight. This ground beef vegetable soup is a keeper, whether you're making it in the summer to make the most of your garden's bounty or in the winter to stay warm.
What You Need: 1 1/2 pounds of beef stew meat
2 1/2 tablespoons of olive oil, split
Seasoning with salt and pepper, just ground.
1 big onion, or 1 and 3/4 cups of chopped yellow onion
Three medium-sized carrots, peeled and diced to a 1/4 cup each
1/3 cup of chopped celery
Garlic, minced (four cloves)—1 1/2 tablespoons
8 cups of low-sodium chicken or beef stock
2 cans of chopped tomatoes (14 oz. each)
Dried basil, 1 1/2 teaspoons
Dried oregano, 1 teaspoon
Dried thyme, 1/2 teaspoon
One pound of red or yellow potatoes, peeled and cubed to a 3/4-inch thickness
