Put the bell pepper, zucchini, and green beans in the pot. Mix together.
Include tomatoes and broth.
Add the chopped tomatoes and vegetable broth. Include the mix of herbs, bay leaf, salt, and pepper. Heat until boiling.
Cook over low heat.
Lower the temperature and allow the soup to cook gently for approximately 20-30 minutes, until the vegetables are soft.

If you have it, add the fresh spinach or kale and cook for 5 more minutes until it shrinks.
Change the flavoring:
Try the food and add more salt and pepper if necessary. Take out the bay leaf before serving.
