3 and a half cups of grated zucchini, after removing excess water.
1 onion cut into small pieces
16 ounces of cheddar cheese, separated into parts.
1 cup of corn that was frozen and then allowed to defrost.
1 jalapeño pepper, chopped (take out the seeds for a milder flavor)
2 huevos
1 teaspoon of powdered garlic
1 teaspoon of cumin
1 small spoon of salt
1/2 teaspoon of black pepper
1 box of corn muffin mix (8.5 ounces)
Instructions for Making Zucchini Cornbread Casserole
Heat the oven to 350 degrees Fahrenheit and lightly grease a baking dish that is 8 inches by 8 inches.
In a big bowl, combine the zucchini, onion, some of the cheese, corn, jalapeño, eggs, and spices.
Mix the corn muffin mix slowly until everything is well mixed.
Put the mixture in the baking dish and sprinkle the rest of the cheese on top.
Bake for 50-55 minutes until the center is cooked and the top is golden. Heat before serving.
