- 1 1/2 pounds of chicken breasts without bones or skin, cut into small pieces.

- 1/4 cup of regular flour

- 1/2 teaspoon of paprika

- Add salt and pepper according to your preference.

- 1 little onion, chopped

- 1 cup of mushrooms, sliced

- 1 red pepper, diced

- 2 cloves of garlic, finely chopped

- 1 and a half cups of chicken broth

- 1 cup of frozen mixed vegetables

- 1/2 cup of thick cream

- 1/4 cup of dry sherry (if desired)

- 1/2 teaspoon of dried thyme

- 1/4 cup of chopped fresh parsley for decoration

Instructions:

In your slow cooker, mix the chicken pieces with flour, paprika, salt, and pepper until they are covered.

2. Put the chopped onion, mushrooms, red bell pepper, and minced garlic in the pan, then mix them well.

3. Add the chicken broth, and remember you can also add a bit of sherry for extra flavor if you like. Add the dried thyme on top.

4. Put the lid on and cook on low for 6 hours or on high for 3 hours, until the chicken is very tender and feels soft when you touch it.

15 minutes before serving, add the frozen peas and carrots to the chicken and let them mix together.

Finally, mix in the heavy cream to create a smooth and irresistible sauce, and allow it to heat up.

Remember to try it and add more seasoning if necessary.

Serve the dish and sprinkle fresh parsley on top - it's like colorful confetti for your meal!

Different Types & Advice:

- If you don't consume dairy, replace the heavy cream with coconut milk. It's unique but still delicious!

- Do you want to add more vegetables without being noticed? Add some spinach or kale towards the end of the cooking time.

- ¿Sobró pavo? Great alternative to chicken after all those holiday meals.

- Keep the extra food in the refrigerator and have it for lunch the following day; it tastes even better when the flavors mix together overnight.
