Some time ago, a friend of the family asked me if I knew how to make Woolworth's cheesecake. I didn't remember anyone telling me about a cheesecake, so I definitely didn't have the recipe. So, that made me want to search online for the recipe. Now I'm not sure if this is the real recipe... There are many options available, but this is the one I tested.
The first time I made it, I thought "wow... this is a huge amount of dessert"... I invited some friends over and shared it with them.
Later on, I felt a bit sorry about it.
Because it was really great.
Now, even though this is known as "cheesecake"... No, it isn't. Not at all...
I would call it "Lemon Fluff Dessert" or "Lemon Fluff Ice Box" or something like that, but it's really, really tasty. For those who love lemon and want a light dessert for a spring gathering, this is the perfect choice!

This makes it ideal for hot weather, so you don't need to make your house hotter by using the oven for a long time. It just needs to be placed in the refrigerator. You can prepare this a day or two ahead and keep it in the fridge until you're ready to serve.
The Cheesecake has a Graham Cracker crust.
I really enjoy the graham cracker base of this dessert, it's just fantastic. Other options for a graham cracker crust include using crushed vanilla sandwich cookies or vanilla wafers instead. However, the crust made of graham crackers is simple to make and delicious, so there is no reason to alter it.
Lemon Fluff Cheesecake Filling
The simplest part! The cheesecake filling is made with cream cheese, sugar, lemon juice (which adds a special flavor), lemon jell-o (to keep it fluffy), and evaporated milk.
Although rich, this cheesecake has a light and airy texture, unlike a New York cheesecake, which is denser and requires twice the amount of cream cheese.
TIP: I have tried making this recipe using cold evaporated milk and also heavy whipping cream. I couldn't notice a big difference in the texture or flavor. Use whichever one you have available. The most important thing is to remember to cool the canned milk, which is why I decided to also try it with whipping cream.
