Pies from Cornwall.

Let's make the dough. Start by combining the flour and salt. Once you have mixed the ingredients, incorporate cold butter until the mixture resembles small pieces. Combine water and egg yolk in a bowl, then mix it with the flour mixture. Put it in the refrigerator for half an hour.

Now, let's talk about the filling. Begin by cooking the meat until it changes color and then add the spices you like. Cook the vegetables in a pan until they are nearly tender. After that, add dried herbs to the beef and mix well.

It's time to bake the pastries. Divide the dough into six pieces and shape them into circles. Moisten the edges of each circle, add filling to one side, fold over, and seal them shut.

Instructions for baking: Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper or foil. Place your baked goods on the tray for baking. Create small holes at the top of each one to allow air to enter. Cover them with whisked egg before completing. Bake in a preheated oven for 35 to 40 minutes until they turn golden brown.

If you want to keep some for another time. Cook them in the oven for 20 minutes before putting them in the freezer. When you are ready to eat, put egg wash on each pastry. Continue cooking for an additional 20 minutes.

Savor each bite and enjoy the tasty flavors of your classic Cornish beef pasties!
