List of ingredients:
1 pound of dried white beans (soaked in water overnight and then drained)
1 big yellow onion, diced
3 pieces of garlic, finely chopped
3/4 cup of molasses
1/2 cup of firmly packed brown sugar
1/4 cup of maple syrup
1/4 cup of ketchup
1 tablespoon of powdered mustard
1 teaspoon of smoked paprika
1/2 teaspoon of black pepper powder
1/4 teaspoon of cayenne pepper (if you like it spicy)
4 cups of water, or more if necessary.
8 ounces of thick-cut bacon, cooked and cut into pieces (or use smoked ham hocks instead).
Instructions:
Put the beans that were soaked beforehand in the slow cooker. Make sure there is plenty of space to grow.
Put the diced onion and crushed garlic.
Mix together molasses, brown sugar, maple syrup, ketchup, mustard, smoked paprika, black pepper, and cayenne in a bowl. Pour the beans.
Sprinkle the bacon or ham pieces on top.
Put in sufficient water to completely cover the beans. Change the amount if needed.
Place a lid on the pot and cook on low heat for 6-8 hours, until the beans are soft and the sauce becomes thicker.
Different Types and Advice:
To make a vegetarian version, leave out the bacon and use more smoked paprika or liquid smoke.
Change the level of sweetness by adding more brown sugar or maple syrup.
A bit of apple cider vinegar gives a pleasant tangy flavor.
