Whenever my Hawaiian neighbor brought this over, I knew I had to get the recipe! Highly recommended!


Four skinless, boneless chicken breasts
1/2 cup of barbeque sauce
Fresh or canned pineapple pieces, measuring 1 cup (drained, if canned),
2 minced cloves of garlic
1-tsp. olive oil
Spoonful of paprika
Before serving, season with salt and pepper.
Garnish with chopped fresh parsley or cilantro, if desired.
How to Follow
First, get your oven up to 375 degrees.
2. In a separate small bowl, combine the paprika, garlic, and barbecue sauce.
3. Season the chicken breasts with salt and pepper and place them in a baking dish.
4. Coat the chicken well by pouring the barbecue sauce mixture over it.
5. Distribute the pineapple pieces all over the chicken.
6. After the pineapples and chicken are tossed in the marinade, drizzle with olive oil.
7. Preheat the oven to 250 degrees Fahrenheit and bake for 25 to 30 minutes, or until chicken is cooked through and sauce is bubbling.

8. If you'd like, you may top it up with some chopped cilantro or parsley just before serving.
Changes and Hints
For a change of pace, use a smoky or spicy barbecue sauce instead of the original. It will give the dish a whole new dimension of taste. You may enhance the flavor and texture by using onions and bell peppers. Squeeze a lime wedge over the chicken just before serving for an extra kick. Grilling the chicken and pineapple instead of baking would be another option for those seeking a lighter version.
