Casserole with Mexican Tortillas


Use 1 pound of ground beef.
Onion, half a cup diced
Taco seasoning mix, one packet.
two cups of cheddar cheese, shredded
To make them simpler to spread, warm up one can of refried beans in the microwave.
1 cup of cooked rice (Minute Rice was the brand I used)
I will just be using one can of drained Mexican mix corn. about half a can
A quarter to half a dozen big flour tortillas
Choose mild or spicy salsa; 8 ounces of thick chunky salsa is plenty.
Mexican Tortilla Casserole Recipe Instructions
Apply cooking spray to a springform pan, a circular cake pan, or a casserole dish.
Reduce fat by browning ground meat and onion.
After adding the taco spices, cook as directed on the packet.
Spread one tortilla on the bottom of the baking dish. Top with one third of the beans. Layer on top of that, one third of the meat. Finally, sprinkle with some cheese.
Half of the salsa, half of the corn, half of the cheese, and half of the second tortilla layer.
The third layer consists of tortillas, beans, meat, and cheese.

After 40 minutes of baking at 350 degrees with the foil removed, uncover and continue baking for another 10 to 15 minutes. Allow to rest for 5 minutes prior to slicing. Upon completion of baking, garnish with sour cream, chopped onion, and shredded lettuce, if preferred.
