Pastries for a Southern Tea Cake


Take the dough out of the fridge and have your oven ready to bake at 325 degrees when it's firm.
Spread parchment paper on a baking sheet–line it.
Gather a measuring tablespoon and roll out enough cookie batter to fill it. To make it flatten a little, push the middle with your thumb and set it on the tray.
Repeat with the remaining dough, being sure to leave at least 1 1/2 inches of space between each ball.
Take it out of the oven after 9 to 11 minutes, or when the edges start to become golden.
Once cooled, proceed to serve.
Important Reminder: All components must be at room temperature.   They will blend together far more smoothly, resulting in a fantastic, well combined dough.


If you put your freshly made Southern Tea Cakes in an airtight container and keep them at room temperature, they will retain their delicious flavor for up to a week.

You may also freeze the tea cakes to prolong their delicious texture; simply wrap them well before freezing, and they will remain excellent for up to three months.
