Whenever my mother-in-law gets upset with me, baking these cookies always seem to cheer her up! I like to call these 'Peacekeeper' cookies!

 


Ingredients:


1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chopped pecans, toasted

Instructions:


Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

Cream butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.

Beat in eggs one at a time, then add vanilla extract.

In another bowl, whisk flour, baking soda, and salt.

Gradually mix dry ingredients into the wet mixture.

Fold in toasted chopped pecans.

Drop tablespoons of dough onto baking sheets, spacing them apart.

Bake for 10-12 minutes until golden brown at the edges but soft in the center.

Let cookies cool on the sheet for a few minutes, then transfer to a wire rack.
