Sheet Pan Quesadillas

 


Ingredients 🛒


1 tbsp Extra-virgin olive oil

2 bell peppers, chopped

1 onion, chopped

1 1/2 lb Ground beef

1 tsp Chili powder

1 tsp Cumin

1/2 tsp Smoked paprika

Kosher salt & Freshly ground black pepper

8 large flour tortillas

1 c. Each of shredded cheddar and monterey

2 green onions, thinly sliced

Sour cream & Pico de gallo for garnish

Sauté Away: Preheat your oven to 425°. In a large skillet, heat the olive oil and sauté bell peppers and onion until they’re soft (~5 minutes). Pop them out and set aside. Sizzle that ground beef until no pink’s in sight (~5 minutes), drain fat, toss in the spices, and season.


Layer It Up: Lay out 6 tortillas around the edges of a half sheet pan, letting them half hang. Use another tortilla to cover the center, then layer on that beef, sautéed veggies, cheeses, and green onions.


Fold and Bake: Add another central tortilla on top, fold the hanging ones toward the center, and plop another baking sheet on top to keep it all cozy. Bake until it begins to crisp (~20 minutes), remove the top sheet, and let it get that golden edge for another 15 minutes.


Slice, serve with a dollop of sour cream and a splash of pico de gallo, and watch those faces light up! 🎉
