Peach Cobbler Snack Cake

 


Ingredients:

1 cup + 3 tsp sugar, separated
2 1/2 cups sliced peaches (fresh or frozen)
1/2 tsp corn starch
2 cups flour
1/2 tsp salt
2 1/2 tsp baking powder
1 1/2 cups milk
3 tbsp unsalted butter, melted
Fresh whipped cream (for garnish)
Instructions:

Start by preheating the oven to 350°F and lightly greasing an 8-x-8-inch baking dish.
Mix 3 tsp of sugar with corn starch in a bowl. Gently coat the peach slices in this mixture and set aside.
In a medium-sized bowl, sift together the flour, 1 cup sugar, salt, and baking powder.
Whisk the melted butter into the milk in a separate bowl.
Gradually mix the wet ingredients into the dry ones until a smooth batter forms.
Transfer the batter into the baking dish. Embed the peach slices within and also layer some on the top.
Bake for approximately 50-55 minutes, or until an inserted toothpick comes out clean.
Once done, let it cool slightly, and serve with a dollop of fresh whipped cream.
