I can't seem to get tired of this recipe. It's been a fixture on my menu lately

 


Ingredients:


4 cups thinly sliced potatoes

3 tbsp butter

1 1⁄2 cups milk

3 tbsp all-purpose flour

1 cup grated sharp cheddar cheese

1⁄2 cup grated cheese (cheddar or Gruyere) for the crust

Salt, to your preference

1/2 cup sliced green onions (optional for garnishing)

A pinch of cayenne pepper (for that subtle kick, optional)

Directions:


Kickstart your oven to preheat at 375°F (190°C) and lightly grease your favorite baking dish.

Over medium heat, melt butter in a saucepan. Whisk in the flour and cook until it's a pale golden shade.

Gradually introduce the milk, stirring consistently. Allow it to simmer until you achieve a thicker consistency.

Off the heat, fold in the sharp cheddar cheese, salt, and a hint of cayenne pepper if you're in the mood for a little spice. Stir until it's velvety.

Assemble half the potatoes in your dish, bathing them with 50% of your cheese sauce.

Layer the remaining potatoes and drench with the rest of the sauce.

Grace the top with your choice of grated cheese.

Cloak with foil and send into the oven for a 45-minute bake.

Unveil by removing the foil, letting it bake further until you get a golden, crispy crown, typically 15-20 minutes more.

Allow it to cool for a bit. If you're a fan of green onions, they make a great garnish. Dive in and savor every bite!
