Ingredients:
2 chicken breasts
3 tablespoons butter
1 tsp. oregano, divided
Salt and pepper, as per your preference
1 medium-sized onion, finely chopped
1 small jar of sun-dried tomatoes, diced
4 garlic cloves, minced
1/2 cup rich heavy cream
1/2 cup chicken stock
A handful of fresh spinach
1/3 cup Parmesan cheese, finely grated
Steps to Perfect Chicken Parmesan:
First, season the chicken breasts with salt, pepper, and half of the oregano.
Heat a skillet over medium-high flame. Melt the butter, and for added flavor, pour in a touch of the sun-dried tomato oil.
Lay the chicken breasts in the skillet. Cook each side for 3-4 minutes until they attain a beautiful golden-brown hue. Once cooked, transfer them to a plate.
Using the same skillet, melt a tablespoon of butter. It's time for our sauce. Stir in the garlic, chopped onion, sun-dried tomatoes, and the remaining oregano. Let them sauté till fragrant.
Pour in the heavy cream, chicken stock, and sprinkle in the Parmesan cheese. Stir it all together, allowing the ingredients to mingle and the sauce to thicken slightly. Season with salt and pepper to your liking.
Add in the fresh spinach, letting it wilt into the creamy sauce.
Reintroduce the chicken breasts to the skillet, letting them bask in the sauce for an additional 2-3 minutes.
For the finishing touch, sprinkle over some freshly chopped parsley.
Serve piping hot, and watch as your plate takes center stage at the dinner table!
