7 Up Pound Cake



1 1/2 cups of butter, softened
3 cups of sugar
5 eggs
1 teaspoon of vanilla extract
2 teaspoons of almond (or lemon) extract
3 cups of all-purpose flour
1 cup of Sprite, 7-Up, or Sierra Mist


Preheat your oven to 350 degrees Fahrenheit.
Cream the butter in a large bowl. Add the sugar, one cup at a time. After each addition, beat the mixture for a minute and scrape the sides of the bowl.
Once all the sugar is added, continue to beat the mixture for an additional 4 minutes.
Add the eggs, one at a time, mixing the batter after each addition.
Add the vanilla and almond (or lemon) extracts to the mixture and mix well.
Alternately add the flour and soda to the mixture, starting and ending with the flour. Make sure to mix well after each addition and continue scraping the sides of the bowl.
Pour the batter into a greased Bundt pan and bake for 1 hour to 1 hour and 10 minutes, until the cake is firm to touch.
If you're using a loaf pan instead of a Bundt pan, this mixture will fill two pans. In this case, bake for 50-60 minutes, until the cake is firm.
