°600g to 800g lean beef, cut into large cubes (beef shoulder for me)
°olive oil
°1 kg of potatoes
°1 chopped onion
°3 or 4 crushed garlic cloves
°1 can medium tomatoes, peeled, whole or diced (or tomato coulis)
°1 teaspoon of paprika powder
°1 bay leaf
°1 tablespoon Herbes de Provence (or thyme, oregano)
°1 teaspoon harissa (or other hot sauce), optional
°about 1 cup 250 ml broth or water
°Few olives (optional)
°Salt and pepper from the mill
+to serve:
°chopped fresh parsley or cilantro (or other aromatic herbs to taste)
Drizzle of good quality olive oil (optional)
*To prepare
Peel and wash the vegetables.
Chop the onion and garlic.
Cutting potatoes into quarters or eighths, depending on their size. Or large cubes if you prefer.
Chop the parsley, if you are using it.
Crush the tomatoes by hand or by coarsely blending them in a food processor.
Cut the meat into large cubes if you haven't already.
to cook :
Heat a drizzle of olive oil in a heavy-bottomed saucepan or large high-sided skillet.
Burn the pieces of meat on all sides over high heat.
Add onions and garlic. Mix and cook for 5 minutes over medium heat, stirring occasionally.
Add the crushed or blended tomatoes, the spices, and harissa (or any other hot sauce) if using. Bring to a boil, cover and reduce heat. Cook for 10 minutes over medium heat.
Add potato pieces.
If necessary, add broth or water. Be careful, it is enough that the liquid barely reaches the same level as the potatoes and meat. Salt and pepper to taste.
Bring to a boil, cover and reduce heat. Simmer for about 30 minutes (until potatoes and meat are tender). The sauce is usually thick and reduced. If not, reduce sauce to simmer and over high heat. This will allow excess liquid to evaporate. Garnish with some olives, if you like.
Taste and adjust seasoning.
At the end of cooking, add a few more olives if you like.
Sprinkle with parsley (or cilantro). Mix and turn off the heat.
Optionally, when ready to serve, drizzle with good quality olive oil and sprinkle with more parsley. Serve hot with bread, simply with the bread to dip in the sauce. Good appetite!
