DELICIOUS HOMEMADE PUMPKIN CAKE RECIPE

 


NECESSARY INGREDIENTS:


FOR THE CAKE:


2 Cups of all-purpose flour

1½ Cups of granulated sugar

1 Teaspoon of baking powder

1 Teaspoon of baking soda

1 Teaspoon of ground cinnamon

½ Teaspoon of ground nutmeg

½ Teaspoon of ground ginger

¼ Teaspoon of ground cloves

½ Teaspoon of salt

1 ½ Cups of canned pumpkin puree

½ Cup of vegetable oil

½ Cup of unsweetened applesauce

3 large eggs

1 Teaspoon of vanilla extract

FOR THE CREAM CHEESE FROSTING:


8-oz of softened cream cheese

½ Cup of unsalted butter, softened

4 Cups of powdered sugar

1 Teaspoon of vanilla extract

Chopped walnuts or pecans, for garnish

Ground cinnamon, for garnish

STEPS FOR PREPARATION:


STEP 1:


Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Ready a 9-inch round cake pan by greasing and flouring it, or you can line it with parchment paper.


STEP 2:


Combine the flour, sugar, baking powder, baking soda, spices (cinnamon, nutmeg, ginger, and cloves), and salt in a large bowl until they are well integrated. Ensure all dry ingredients are thoroughly mixed.


STEP 3:


In a separate container, mix together the pumpkin puree, oil, applesauce, eggs, and vanilla until well combined. Make sure the liquids are uniformly distributed.


STEP 4:


Slowly incorporate the wet ingredients into the dry mixture, stirring just until combined. Be careful not to overmix as this can result in a dense cake. Spread the batter evenly across the cake pan using a spatula.


STEP 5:


Bake in the preheated oven for about 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.


STEP 6:


After baking, remove the cake from the oven and let it cool in the pan for about 10 minutes. Afterward, transfer the cake to a cooling rack.


STEP 7:


As the cake cools, prepare the cream cheese frosting. Blend the softened cream cheese and butter in a mixing bowl, beating them until smooth and creamy.


STEP 8:


Gradually add the powdered sugar, one cup at a time, while continuously beating the mixture. Add in the vanilla extract and mix until well combined.


STEP 9:


Once the cake has cooled completely, apply the cream cheese frosting on top and around the sides. Use an offset spatula or a butter knife to create an even layer.


STEP 10:


For a bit of extra flair, garnish the top of the cake with chopped walnuts or pecans, and dust lightly with ground cinnamon.
