*Dijon-Prime-Rib*



*Ingredients

°1 (5 pounds) prime rib roast
°3 garlic cloves, thinly sliced
°kosher salt to taste
°1/2 c Dijon mustard
°3 sprigs of fresh rosemary, leaves plucked

* Methods : 

Preheat oven 450 degrees F 
Slice small cuts along outer edges of roast; fill the cups with slices of garlic. salt entire roast. Spread a thin layer of Dijon mustard all over the roast; generously sprinkle the mustard layer with rosemary leaves. Place the roast, bone side down, in a baking dish.
Baking in preheated oven about 30 mn. Minimize oven temperature 350 degrees F  Place a meat thermometer into the thickest part of the meat without touching the bone. Cook to desired doneness or to an internal temperature of at least 145 degrees F (65 degrees C) for medium doneness, about 1 1/2 hours. Remove from the oven, cover with a sheet of doubled aluminum foil and let rest in a warm place for 10 to 15 minutes before slicing.
