Roast Carrots, Potatoes & Onions

Simple and clean! My whole circle of relatives likes this recipe so much if it's just for them, I can try it every day! Try it, you will love it! It's made in just one bowl with a few ingredients to clean up.

* ingredients :

° 2 carrots pounds
° 6 whole potatoes
° 1 sweet onion
° Three cloves of garlic
° 6 tablespoons olive oil
° ½ tsp dried thyme
° ½ tsp dried parsley
° Salt & pepper to taste

* Methods  :

Preheat oven to 475 degrees F.
Peel the carrots, cut into small pieces. Cutting potatoes to small pieces, let peel on them. Cut the onions to eighths. Minced garlic.
Mixing carrots, potatoes, & onions in  bowl. Drizzle olive oil over the vegetables and add garlic, thyme, parsley, salt (to taste) and pepper (to taste). Stir until vegetables are covered with olive oil and spices. Place on a cookie sheet in one layer and cover with foil.
Roasted for forty-five min. Remove the aluminum foil and continue roasting for another half an hour or until golden brown, stirring every 10 minutes.
