Broccoli Cheese

 


Broccoli Cheese Bread, the creamiest and cheesy broccoli side dish you'll ever eat. Everyone will ask for seconds. A plate you will make again & again.

One of the good things about the holidays is that I can add all the creamy baked goods I want and just say "OK, it's the holidays." 

Before I made the biggest decision of my life, which was to get married and move to Italy, my husband spent some time in Toronto (actually that's where we met) getting to know my family, friends and of course enjoying my mom's cooking.

One of his favorite dishes was the broccoli casserole. I've never been a big fan of broccoli, but I did it this way it's easy to be one. Needless to say, this is one of the many recipes I took with me to my new country.

* Ingredients

° Half a kilo of broccoli ** 1/2 kilo
° 3 1/2 tablespoons butter
° 3 tablespoons of flour
° 1 1/2 teaspoon salt
° 2 cups milk 490 g
° 1 3/4 cup shredded Swiss cheese (or cheddar cheese) 200 g
° 2 scrambled eggs

* Instructions :

Preheat the oven to 325° (160° C)
Grease a large baking tray with a little fat. (at least 10 x 7 inches / 25 x 18 cm)

Cook broccoli in boiling water for about 8-10 minutes (until tender), drain well. (Gently dry with paper towels if necessary).

In a large saucepan over low heat melt butter, and whisk in flour and salt, continuing to whisk until smooth. Slowly adding milk & continue to beat until it thickens & begins to boil (slowly simmer for 1-2 minutes). Remove from heat.

Add the cheese and broccoli and mix gently until the cheese begins to melt a little, then add the eggs and continue to stir gently until combined.

Pour into prepared baking dish and bake for approximately 30-45 minutes. Remove from the oven and leave for 5 minutes before serving.
