Orange Cranberry Bread & Glaze

 


Cranberry-orange bread is incredibly moist, dense, and filled with oranges and cranberries in every bite. It's even topped with a sweet orange polish that puts it on top. We think it's the best cranberry orange bread out there!

It took three years of trial and error to get the perfect cranberry orange bread recipe. Not that I have worked on it for three years in a row.

This wet cranberry orange bread is sweet, slightly tart, and wonderfully dense. 

Of course we're also biased toward crunchy apples and crunchy cherries too! We've even converted this baking recipe into cranberry orange cookies with streusel toppings, so it's okay to enjoy it for breakfast and dessert!

* Ingredients :

+Bread
° 2 cups all-purpose flour
° 1 teaspoon baking powder
° Salt 1/2 tsp
° 1 cup granulated sugar
° 1 tablespoon orange peel
° 1/2 cup butter
° 1/2 cup canola oil or vegetable oil
° 1/2 cup orange juice
° 2 large eggs
° 1 teaspoon vanilla
° 1 1/2 cup fresh cranberries
+Glaze
° 1 cup powdered sugar
° 2-3 tablespoons orange juice

* Instructions :

Preheat oven to 350 degrees, and grease a 9 x 5 inch loaf tray.
In a medium bowl, mix flour, baking powder, and salt together until well combined. Sit aside.
In a detach small bowl, utilize a spoon to blend sugar & orange peel until sugar is a lighltly orange in color. Sit aside.
To a blender bowl (or a large bowl and a hand blender) add yogurt, oil, orange juice, eggs, and vanilla. Bend on speed To combined.
Add the flour mixture and orange peel / sugar mixture. Continue mixing on low speed until all ingredients are smooth like muffin dough.
Nextly, adding cranberries & utilize a wooden spoon or spatuula to stir until well mixed .
Transfer the mixture to the buttered loaf pan. Put in the oven and bake for 70-75 minutes. If the bread starts to turn too brown, place a piece of aluminum foil loosely on top to prevent burning.
The bread is cooked when a toothpick is inserted in the center and very light crumbs come out in it. Take the bread out of the oven and let it cool for 5-7 minutes before transferring it from the skillet to a cooling rack.
