Old Fashioned Salmon Patties

 


I love salmon patties. I always have. My MawMaw light knew how much I loved them, and every time I went to visit her as a girl - she always had a tin foil pie plate sitting in her toaster oven - filled to the brim with homemade salmon pancakes, fried okra, and fried squash. The first thing I did when I got home was to hug her and PawPaw Buddy, then go straight to the kitchen to pull out my waiting plate to eat. In fact, I don't remember a single time I came to visit as I didn't have a plate of salmon, okra, and squash patties waiting for me. Oh, what a memory. A delicious memory in it!

 

MawMaw doesn't cook as much anymore, but I'll always have fond memories of tiny tin foil dishes filled with some of my favorite foods just waiting for me. She gave me her recipe many years ago after my marriage, and this is the only way I make salmon patties to this day.

 

 Having a can of salmon around makes it easy to get a delicious home-cooked meal on the table. Homemade made easy!

 

* Ingredients :

 

° 1 (14 3/4 ounce) canned salmon

° 1/4 cup finely chopped onion

° 1/4 cup cornmeal

° 1/4 cup flour

° 1 egg

° 3 tablespoons of mayonnaise

 

* Directions :

 

Open and drain the salmon well. Place the drained salmon in a mixing bowl and peel it evenly with a fork.

Add onion, corn flour, flour, mayonnaise and eggs. Stir until well combined.

Shape the mixture into discs of medium or smaller burger size.

Cook in oil in a skillet over medium heat until brown on all sides. Turn once while frying.

Note: mayonnaise helps pancakes keep their shape and prevents them from drying out.
