CABBAGE ROLL SOUP

Cabbage Soup is the perfect way to enjoy cabbage rolls without much effort!

 

Simmer cabbage, beef, pork and rice in a delicious tomato gravy for a comfortable food bowl.

 

 

Growing up with a Polish grandmother, dishes like Easy Cabbage Rolls, Cabbage and Noodles were staples on her table! Simple and easy comfort food!

 

I know you guys love this recipe as much as I love it because every time I post this cabbage soup to Facebook, it gets crazy!

 

There are tons of great ways to prepare cabbage rolls (including a cabbage casserole that can also be made in the slow cooker)! As much as I love traditional cabbage rolls, I also love a good belly-warming soup bowl!

 

This cabbage soup recipe has been adapted from my favorite cabbage rolls to make a quick and easy meal without making all the effort! We simply add it to the bowl and go away, without having to roll!

 

How to make cabbage soup ?

 

My grandmother always made cabbage rolls with a mixture of ground pork and ground beef which is what I use in this recipe. Sometimes I make this cabbage soup with bacon too, love the smoky flavor it adds (and just fry it with rice). If you only have one or the other it will still work perfectly (I've also substituted ground turkey from before with delicious results too).

 

Simply brown the meat, throw everything in the pot and let it simmer (no need to pre-cook the rice)! The result is a rich and filling soup with cabbage, meat and rice.  This soup comes out very thick, almost like stews, so if you prefer more texture, you can add more broth.

 

We serve this with a side of buttermilk biscuits or a homemade buttermilk biscuit and salad for a quick meal of the week! Like most soups and stews, the leftovers (if you're lucky enough to have any of them!) Are great!

 

* Ingredients :

 

° 4 cups beef broth

 

° 8-ounce cans of tomato sauce

 

° 1/2 cup uncooked long-grain rice

 

° 1 bay leaf

 

° 3 teaspoons brown sugar

 

° 2 tsp parsley

 

° 2 teaspoons olive oil

 

° Pinch of salt and pepper

 

° 1 pound ground meat

 

° 1 onion, diced

 

° 2 teaspoons small garlic

 

° 4 cups chopped green cabbage

 

° 2 carrots, sliced

 

 

* Directions  :

 

Step 1:

In a large saucepan, heat the olive oil and add the minced meat, and season with pepper and salt. Cook and divide the meat with a spoon until the meat is browned, about 6 minutes. Add garlic and onions and cook for 4 minutes

 

Step 2:

In the saucepan add the carrots / cabbage / meat broth / rice / tomato sauce / bay leaf / sugar and add salt / pepper. Prepare and cook about 26 minutes until rice.
