* Ingredients :
 
° 9 short ribs
° Lard, bacon
° 1 cup chopped shallots
° 1/2 medium red pepper, green pepper
° 1 stalk of celery
° 3 cups beef broth
° 1 tablespoon tomato paste
° 1 cup of water
° 1 sprig of thyme / rosemary
° 3 tablespoons minced garlic
° Cajun seasoning
° Pepper salt
° Flour
° 1/2 cup red wine
° 1 chopped potato

* Directions :

1- Seasonning short ribs with a some spice about all purposes
2. In a thick bowl, heat bacon lard to a medium temperature
3- Put the short ribs in hot oil until they are light brown on all sides, then take them out of the saucepan and leave them aside
4. Lay the shredded vegetables on the bottom of a heavy baking dish and place the short ribs on top.
Adding red wine also tomato paste, & stirring well
5. Pour beef broth until ribs are partially covered. Adding thyme, also seasonning to your love . I utilize a Cajun seasoning mix .
Cover tightly with aluminum foil and put in an oven at 350 degrees for 3 to 3/12 hours.
The liquid will soften to at least semi of its volume
6- Lift the lid and add the potatoes. Covering also cooking for other 45 minutes, until potatoes are smooth .
